Jalapeño Honey Simple Syrup

Ingredients

  • 8 ounces water
  • 8 ounces raw honey
  • 2-3 jalapeño peppers
  • zest of 1 lime

Directions

Remove the stems and slice the jalapeños lengthwise. You can also remove the seeds for a milder syrup or leave them in for extra heat.

In a saucepan, combine the water and honey. Heat the mixture over low heat, stirring occasionally, until the honey has dissolved.

Add the sliced jalapeños and lime zest to the saucepan and bring the mixture to a gentle simmer. Let it simmer on low for about 10 minutes to infuse the flavors.

Remove the saucepan from the heat and allow the syrup to cool to room temperature.

Cool, strain & transfer the syrup to a clean bottle or jar with a tight-fitting lid. Store it in the refrigerator for up to two weeks.

Spicy Margarita Mocktail 

Ingredients

  • juice of 1 lime

  • 2 ounces Jalapeño Honey Simple Syrup

  • 2 ounces freshly squeezed lemon juice

  • 4 ounces citrus-flavored sparkling water

  • Ice cubes

  • Lime wedges, jalapeño slices, and tajin rim for garnish

Directions

In a tall glass, combine the lime juice, jalapeño simple syrup, citrus sparkling water, and lemon juice.

Fill the glass with ice cubes and stir the mixture well until it's thoroughly combined and chilled.

Prepare your serving glass by rubbing the rim with a lime wedge and dipping it in Tajin.

Strain the margarita mixture into your prepared glass, ensuring that the ice cubes are left behind. Garnish the glass with a lime wedge and a slice of jalapeño.
