Instructions:

  2. Wash and thoroughly dry the fresh chili peppers. Remove stems.

  3. If you want to remove some heat from the peppers, slice them in half lengthwise and remove the seeds.

  4. Place the peppers on a baking sheet lined with parchment paper in a single layer.

  5. Roast the peppers in the oven for about 2-4 hours, depending on the size and thickness of the peppers, or until they are completely dried out. You can check by crushing a piece between your fingers; it should crumble easily.

  6. Let cool and transfer the dried peppers to a spice grinder or blender. Grind them until they reach your desired consistency.

  7. Store your homemade chili powder in an airtight container in a cool, dry place. It should last for several months.
